Breakfast Kitchen Sink Muffins
Ingredients
2 cups of Simple Mills Pancake Mix or Birch Benders Paleo Mix
1 lb breakfast sausage (you can also chop up links like Applegate)
2 eggs
1.5 cups milk of choice
1 cup shredded cheddar cheese/ dairy free cheese
3 tbsp maple syrup + more for sweetness
1 tsp of olive oil
Instructions
Preheat oven to 375. Cook the breakfast sausage in a pan for 5-7 minutes. Drain fat and add it to a large bowl.
Add the pancake mix, eggs, milk, cheese, and maple syrup. Mix until well combined.
Line muffin pan with paper muffin liners. Divide the mixture between the 12 cups, filling almost to the top.
Bake for 20 – 22 minutes until cooked through. Let them cool for 10 minutes. Add additional maple syrup if preferred. Have as a snack or enjoy with a side of eggs!
