Tahini Chocolate Chip Cookies

Ingredients

  • 1 cup almond flour

  • 1 cup tahini  (liquidy tahini works best)

  • ½ cup maple syrup

  • 1 egg

  • 1 tsp salt

  • 1 tbsp vanilla extract

  • 1 tsp baking soda

  • Dash of cinnamon

  • 1 cup of chocolate chips  ( I like Hu or Lily’s)

  • sea salt flakes for topping

Instructions

1.      Line a baking sheet with parchment paper

2.      mix together almond flour, vanilla, salt tahini, maple syrup, cinnamon and chocolate chips

3.      The dough should be thick and a little oily. Add a little more almond flour if needed.

4.      Mix well so that everything is coated well, and place the bowl in the refrigerator for 30 minutes.

5.      While the dough is chilling, preheat oven to 350 F.

6.      Remove bowl from the refrigerator, and add the egg and baking soda, and mix together until fully incorporated.

7.      Scoop dough and form 16 cookies.

8.      Bake for 12-14minutes. (they should be slightly undercooked as they will be crispy on the bottom as they cool)

9.      Remove from the oven, sprinkle with flaky sea salt and let the cookies settle before eating
