Pancake Bread

Bread Base Ingredients

  • 2.5 cups of Birch Benders paleo pancake mix

  • 1 teaspoon baking powder, 1 tsp sea salt + 2 tsp cinnamon

  • 1.5 Tbsp Vanilla Extract

  • 2 eggs

  • 1/2 cup cashew milk yogurt (could probably do almond or coconut!)

  • 1/2 cup maple syrup

  • 1/2 cup butter or dairy free butter (melted)

  • Whatever mixins!  Frozen blueberries. Hu chocolate chips or strawberries would be yummy too!

 

Additional Crumb Topping (You can swap for all coconut sugar or golden monk fruit)

  • 3/4 cup Birch Benders Paleo Pancake mix

  • 2  tbsp cinnamon

  • 2 tbsp coconut sugar  (or golden monk fruit)

  • 2 tbsp  golden monk fruit (or coconut  sugar )

  • 4 tbsp butter (slightly soft)  

 

Instructions

  1. To make bread - Whisk together eggs, yogurt, maple syrup, melted butter. Next mix in pancake mix, baking powder, sea salt and cinnamon until batter forms. Add in additional mix ins.  Don't over mix.

  2. Pour into 9X11 bread pan

  3. (For Crumb Topping) - In small bowl, mix topping ingredients, working butter in with a fork. Should be a thick crumble.  Spread over batter and slightly poke into batter.

  4. Bake for 35-40 min on 350 F

  5. If want additional flavor/ sweetness, drizzle maple syrup over warm bread when finished!
